Description: The name 589 derives from the year our town was likely founded under its current name, Roveredo in Piano, as recorded in 1589. "Roberetum," on the other hand, is the Latin name for Roveredo in Piano and refers to our red wine made from disease-resistant grape varieties.
The wine is produced from red grapes grown on grape varieties resistant to fungal diseases. These varieties are the result of ongoing research by the Rauscedo Cooperative Nurseries (Pordenone) and a selection process—underway for several decades—involving crosses between classic wine varieties and hybrid American and Asian grape varieties resistant to fungal diseases. The advantage of these grape varieties is the minimal number of treatments required and the resulting low environmental impact of their cultivation.
Grapes: Merlot Khorus, Cabernet Volos, and other disease-resistant red grape varieties.
The harvested grapes are left to macerate for about 9 days; then, once fermentation is complete and the skins are separated, the wine is aged in stainless steel tanks and barrique barrels for several months.
Color: Intense ruby red
Aroma: Berries and red fruit, with light floral and spicy notes.
Taste: Well-structured and balanced, it is slightly tannic—typical of hardy reds—with the spicy and wild berry notes from the aroma reappearing in the finish, which is very persistent.
Food Pairings: Pairs well with cured meats, red meats, game, and flavorful/aged cheeses.
